Smoooothie Sunday

Whether you are partied a little - or a lot - too hard last night (you know who you are), or you just want to make a good decision, smoothies are the ticket!
Just be careful they don't turn into a sugar cocktail... protein and fat are crucial!

EIRE-eally like this IRISH SMOOTHIE:
(No, there isn't booze in it... it's just orange and green)

- 1 navel orange
- 1 banana
- 1 cup raw spinach
- Pint of almond milk (or non-soy dairy-free milk of your choice)
- 2 scoops of your favorite non-soy protein powder (I like grain based or hemp)
- 1 Tbl almond butter
- Drizzle of Maple syrup (grade B)

Blend and ENJOY!
Bonus points: if your orange is organic, zest the peel for extra nutrients and color :)

Potato and Leek Soup

(gluten, grain, dairy, and soy free)

2 Leeks
4 tablespoons Extra Virgin Olive Oil
8 - 10 Red Skin Potatoes
6 cups Chicken Stock (or water)
Thyme
1 cup Coconut Milk
Sea Salt and Pepper.


1. Saute the leeks in half of the olive oil until soft.

2. Add potatoes and stock/water, bring to a boil, and skim off anything that develops on top.

3. Simmer until vegetables are soft.

4. Add thyme and other seasonings.

5. Puree soup with immersion blender, or in food processor.  If using regular blender, let cool COMPLETELY before blending.

6. Blend in coconut milk.

Try adding kale and other leafy greens to make this soup even more nutrient dense!
