One Pot + Protein = MEAL TIME!

No, this will not be the most beautiful meal you will ever make, BUT, on a regular ol' day when you are just throwing something together for yourself or the family (which is most of the time, right?), this is a quick, easy, and very nutritious option. 

Start with some bison breakfast links or brats (other organic meats work here too).  Sautee them in a healthy fat, such as coconut oil.  I used red palm oil here, which is why it is orange.  Make sure you find sustainably harvested palm oil!  


When the meat is almost done cooking, but not quite, add some greens on top.  I used kale here...


Now, again, this is not going to make the pages of Gourmet Magazine anytime soon, but it is a GREAT meal that is my own go-to when cooking for myself.  It is about EASY and nutritious.


Then, I topped it with sauerkraut (the real deal, people!  Refrigerated and naturally fermented ONLY), avocado, cilantro, and whatever else looked good in the pantry such as sunflower seeds.  Bon Appetit!
